My name is Wendy McMullen, I live in Mississippi where I am married to my husband Chuck and we have three beautiful children, Kylee 15, and 12 year old twins, Parker and Noah. I am the owner of Mississippi Sweets which is a boutique style cake shop that is located in the heart of our downtown area. I just recently celebrated the one year anniversary of opening. Before opening my shop I was a stay-at-home mom. I have been decorating for the public for four years. I’m mostly self-taught by watching lots of you tube videos and I have a subscription to SugarEd Productions and the SugarGeek Show. I have attended several demo and hands on classes by people such as Sharon Zambito, Jay Qualls, Reva Alexander-Hawk, Dawn Parrot, Sarah Myers, and several others. I am also a member of ICES (International Cake Exploration Societé) where I’m able to participate in sharing with others short demos and tips/tricks . My dream has come true of owning my own shop, but I haven’t stopped dreaming. One day I hope to have a classroom where I can teach others the skill of decorating cakes.
Cheesecake Cupcakes
1 box white cake mix
1 c water
1/3 c oil
3 eggs
1 box cheesecake flavored pudding
1 tsp cheesecake or cream cheese flavoring
Golden Oreos
Preheat oven to 325 degrees. Follow instructions on package and add pudding mix and flavoring. Place one Golden Oreo in each cupcake liner. Fill each cup 2/3 full. Bake for 20-25 minutes or until toothpick inserted comes out clean. Allow to cool completely before frosting.
Cream Cheese Icing:
1 c salted butter (2 American sticks)
1 c high ratio shortening (regular shortening can be used)
8 oz cream cheese
1 tsp vanilla
2 lb powdered sugar
4 tbsp water or milk
Beat together cream cheese, butter, and shortening on medium with an electric mixture until smooth and creamy. Beat in vanilla extract. Add powdered sugar slowly mixing on low just until combined. Add water/milk adding or subtracting until getting the desired consistency.
