My Name is Margaret S. Garner, a retired Class A Contractor. During my career I built new single homes, townhomes and renovated older homes. I have been retired since 2008.
I have always been a very active person and the most enjoyable part of my career was helping the architects design the floor plans. Well, after 2 years of retirement I was going crazy with boredom.
I was in Michael's Craft Store one day and saw a sign for cake decorating classes. Without hesitating I signed up. After just one class I was hooked. I have been doing cakes since them, using the name of Simply Cakes By Nona. Nona being Italian for Grandmother. I continue to educate myself by joining online sites, such as SugarEd Productions and Craftsy. in addition to numerous other sites.
My tag line that I tell all my clients: instead of Building Homes I build Cakes!!
The below Recipe is my most favorite go to cake for a Delicious, easy, cake. Well, I do have to say it is called a cake but it is really a Cheesecake.
LADY FINGER CAKE
4 Packages of Soft Lady Finger Cookies ( These are always located in the Desert Freezer Section in my local Grocery Store.)
3 Packages (8 oz.) Cream Cheese
1 ½ Cups Granulated Sugar
1 Teaspoon Vanilla
1 Pint (2 Cups) Heavy Whipping Cream
Topping Of Choice, my favorite is Lemon Curd.
Place mixing bowl and whipping attachment of your mixer in freezer for 15 minutes. Remove and Whip Heavy cream until stiff peaks form. Place in refrigerator.
Prepare a 9” Spingfoam Pan by rubbing Butter all around sides and bottom. Place one layer of Lady Fingers on Bottom and and apply Lady Fingers to Sides.
Mix Cream Cheese, Sugar and Vanilla on Medium speed for 20 Minutes, (Do not skip). Fold in Heavy Whipping Cream.
Pour 1/3rd of Batter on bottom, add another layer of Lady Fingers, another 1/3rd of Batter, then the Final layer of Lady Fingers, Add last 1/3 of Batter. Smooth and place in refrigerator for at least 8-10 hours. Top with favorite Topping.
